COLLEGE STATION – A Creative Sausage Making Workshop is scheduled Jan. 16-17 at the Rosenthal Meat Science and Technology Center at Texas A&M University in College Station.
The workshop will teach the basics of making sausage and is open to both beginning and novice sausage makers. The goal of the program is to help attendees increase their knowledge of or gain more experience in sausage making, according to organizers.
“This hands-on workshop will engage participants in important aspects of sausage making from meat selection, ingredients, casings, stuffing, equipment, processing and final finished product,” said Dr. Davey Griffin, workshop coordinator and a Texas A&M AgriLife Extension Service meat specialist.
Griffin said participants will manufacture their own sausages, both smoked and fresh, and have the opportunity to take the sausages home.
“This program will help you understand the art and science of sausage making,” Griffin said.
Cost is $325 by Jan. 2 and $375 thereafter. To register, visit https://agriliferegister.tamu.edu and type in keyword “sausage.” For more program information, email Griffin at dgriff@tamu.edu or visit http://animalscience.tamu.edu for online registration information.
